Whatever you like, there are options out there. For a cheaper entry level joystick, the Logitech Extreme Pro 3D Joystick or Thrustmaster T-Flight Hotas X Flight Stick are affordable choices. For mid-tier joysticks and throttles, the Thrustmaster T.16000M FCS HOTAS and the CH Products Pro Throttle USB are both decent.
Its either no rolling or rolling at full speed. I thought the advantage of a joystick was that one could control the ship with more fine tuned movements. Another example, if I pull the joystick back in order to point my ships nose upwards it is impossible to keep the stick completely center which makes the ship roll aswell.

The right stick is the usual pitch, roll and yaw. The left stick handles thrusters with quite fine control, making docking a breeze: Y-axis: Forward/reverse thrusters. X-axis: Side thrusters. RZ-axis: Vertical thrusters. Throttle: % throttle. The throttle acts like cruise control, and also for supercruise.
